Once your order is placed, we carefully select a prime two to three-year-old bison for ethical field harvest. After the harvest, your bison will be professionally processed according to your specific preferences. The estimated final weight of your bison will be between 300 and 340 lbs, and the final price will be determined by this weight. Following the butcher date, the exact weight will be calculated, and the final charge, minus your deposit, will be applied. A receipt for the final charge will be provided to you.

Custom Processing: Tailored to Your Taste

We offer you complete control over how your bison is processed. Whether you prefer a variety of steaks, roasts, ground bison, or specialty items like sausages, burgers, and snack sticks, the choice is yours. An example cut sheet for an average 320 lbs bison might include:

• 144 lbs of assorted steaks and roasts
• 16 lbs of sausages
• 16 lbs of burgers
• 8 lbs of snack sticks
• 136 lbs of ground bison

The standard processing cost includes vacuum-sealed packaging of standard cuts and ground bison, with a minimum package size of 1 lb per package. However, if you desire custom processing such as smoked products, burger patties, sausages, or other specialty cuts, these services are available at an additional cost. These costs will be transparently added to your final invoice without any markup.

Freezer Space Requirements

To store your bison meat, you should plan for approximately 1 cubic foot of freezer space for every 35-40 lbs of frozen meat. For a whole bison, this translates to at least 10-14 cubic feet of freezer space, ensuring you have plenty of room to keep your meat fresh and ready to enjoy.
