From Field to Freezer: A Transparent Process

When you place an order for a half bison, we select a prime two to three-year-old bison from our pasture. This bison will be humanely field-harvested, respecting both the animal and the land, in line with our commitment to ethical and sustainable practices.

After the harvest, your half bison will be professionally processed to your specifications. The estimated final weight will range between 150 and 170 lbs, with the final price determined by this weight. Once the butcher date is set and the meat is weighed, the final price will be calculated, and the remaining balance, minus your deposit, will be charged. A receipt for the final charge will be provided.

Custom Processing: Tailor Your Meat to Your Preferences

Your half bison can be processed according to your exact preferences. Whether you prefer a variety of steaks, roasts, ground bison, or specialty items like sausages, burgers, and snack sticks, the choice is entirely yours. For example, a typical cut sheet for an average 160 lbs half bison might include:

• 72 lbs of assorted steaks and roasts
• 8 lbs of sausages
• 8 lbs of burgers
• 4 lbs of snack sticks
• 68 lbs of ground bison

Standard processing includes vacuum-sealed packaging of cuts and ground bison, with each package containing a minimum of 1 lb of meat. Should you desire custom processing, such as smoked products, burger patties, sausages, or other specialty cuts, these options are available at an additional cost. These extra processing charges will be transparently added to your final invoice without any markup.

Freezer Space Requirements

To store your half bison, you'll need approximately 1 cubic foot of freezer space for every 35-40 pounds of frozen meat. For a half bison, you should plan for around 4 cubic feet of freezer space to keep your meat fresh and ready for use.
