Process:
Hand-harvested on March 30, 2025, the cherries underwent two days of anaerobic fermentation, followed by natural dehydration on Ethiopian-style raised drying beds. This slow-dry process, completed under the Panamanian sun, preserves vibrant fruit character while layering in depth and complexity. Resting began on April 12, 2025, allowing the coffee to stabilize and fully express its flavors.
